18 top chefs gather for gastronomic festival

Mérida, Yucatán —  Eighteen of the best chefs in the world have come together to create Hokol Vuh, a gastronomic festival that has garnered international attention.

Chefs from as far away as Australia and Russia will host two events that are unprecedented in scope for Yucatán.

Organizers hint that this may become an annual affair. The first edition of Hokol Vuh will bring together chefs René Redzepi, Roberto Solís, Albert Adrià, Esben Holmboe, Ana Ros, Rosio Sánchez, Alejandra Ruiz, Ben Shewry, Jorge Vallejo, David Kinch, Carlo Mirarchi, Christian Puglisi, Vladimir Mukhin, Matt Orlando, Blaine Wetzel and Elena Reygadas.

Proceeds from an exclusive nine-course dinner which includes the flavors and essences of ancient Mayan culture will support development projects in indigenous communities.

The feast will be 8 p.m. Friday at the Hacienda Aké, with more than 200 guests.

On Saturday, a much larger closing party at Rosas y Xocolate will include a sample of dishes created by Vallejo, Solís and Ruiz. In addition, Yucatán’s best restaurants, such as Rosa Sur, Nectar, Oliva and Hermana Republica, will participate.

Hokol Vuh will donate a percentage of its revenue to the nonprofit organization Transformation, Art and Education (TAE), to support development projects for at-risk communities, focused mainly on preserving local gastronomic culture.
