Mérida, Yucatán — When Chicago Chef Rick Bayless returns to Yucatán next year, he may well be a part of history. He will broadcast an attempt to beat what the Guinness World Records certifies was the largest cochinita pibil.

La Fundación Produce said in a statement that that event is already planned as part of the next edition of Yucatan Expocampo 2016, a series of agriculture, livestock, forestry, fishing and craft shows, at the Siglo XXI Convention Center next March.

Bayless is the author of eight books of Mexican cuisine and host of culinary TV show “Mexico, One Dish at a Time.” For the 11th season of his show, every episode will be filmed Yucatán in a schedule that overlaps with the Expocampo.

That foundation is keen to promote Yucatecan cuisine before an international audience that Bayless can deliver.

The current Guinness record was established in March 2010 when some 20,000 people tasted 3,094.2 kg (6,821.54 lbs) of the local delicacy prepared by 11 chefs armed with 140 kilos of achiote. At the time, Gov. Rolando Zapata Bello, appeared for the final serving.

“This is how we build the vision for the future of Yucatán,” Zapata said. “Working together as a team. Together, we have achieved a success that will live in the pages of Guinness World Records and we put Yucatán in the eyes of the world.”
